A very simplified answer to what I love about ST Beyond would be E V E R Y T H I N G ! ! !
It's the ONLY movie I saw twice - I was on the first and last viewing in our town! I love the relationship between Jim, Spock and Leonard (and also getting to see Spock and Leonard working together!), seeing Uhura as the full-fledged bad-arse lady she always has been, THE UNIFORMS!, the alien species and costumes, JAYLAH!, the way Nimoy's/Spock Prime's passing was handled (I might have shed a tear or a few), the humour, THE CLASSICAL MUSICAL PIECE THAT IS THE SONG SABOTAGE, Chris Pine looking Fine!, it's all so visually beautiful and just- ASDFGHJKL!!!
Really, the only thing I didn't like was Spock's fringe - it looked like Jim cut it for him while insisting he knows what he's doing.

I was really touched by the tribute to Anton Yelchin. Anton was a fan of whiskey and the drink McCoy and Kirk had (I found this in Chekov's locker) was a tribute to that.
